Instructions
Combine all marinade ingredients and mix well.
Trim and slice your Beef heart in jerky sized strips. One 3 pound heart will yield about 1 1/2 pounds of clean jerky strips, don't be shocked at the waste.
Toss Beef Heart Strips with marinade for 48 hours in the fridge, stirring occasionally. Making sure all the strips are fully submerged.
Drain strips from marinade but do not rinse.
Lay strips on your dehydrator trays, making sure they don't touch.
Dehydrate at 155-160 degrees (or according to your dehydrator's manufacturers instructions) until all pieces are dried to your personal preference.

We have 2 dehydrators THIS one is budget friendly and great if your are just starting out. We also have a very large commercial dehydrator because we do large volumes of preserving.
