My name is Hayley and I’m chicken wing obsessed. That’s not just a cliche line to use as a blog post intro but the honest to goodness truth. Perhaps you’ve noticed with my Smoked BBQ Chicken Wings, Paleo Breaded Chicken Wings, Vegetarian Gluten-Free Buffalo Cauliflower Wings and now these Crispiest Air Fryer Chicken Wings… basically I’ve never met a wing I didn’t like!

Chicken wings have been one of my favorite foods for as long as I can remember. As a kid in the early 1980’s, we ate chicken wings at home often, but they weren’t a popular eat-out food.

My grandma started the tradition with her ‘picnic chicken’ style flippers (aka chicken wings).

She very lightly breaded them and slow fried them in a skillet of fat. The recipe carried into my mom’s kitchen and later into mine. They were delicious freshly made and served hot but nearly equally delicious chilled, from the fridge as leftover or packed in a cooler for a picnic.

Let me be abundantly clear, I have ZERO opposition to eating healthy fats or cooking healthy food in healthy fats, BUT I seriously hate the mess and wasteful expense of frying food! But with the introduction of air fryers, gone are the days of sticky fried grease splatters all over your kitchen, but you still get to enjoy the crispiness you crave. And my Crispy Air Fryer Breaded Chicken Wings are no-doubt soon to be your go-to way to indulge without the guilt (or messy clean up)!

How to make Crispy Breaded Chicken Wings

The secret to Grandma Elsie’s always delicious ‘flippers’ was using a super light breading. Just enough to give texture to the skin and hold a little extra flavor. Not thickly coated or peeling off, just the lightest and crispiest coating on the already delicious chicken skin.

Corn starch is often used as a thickening agent for sauces and soups and is commonly used in Asian cooking for stir-fries. However, when used in your breading for your air fryer breaded chicken wings, it will leave you with an audibly crunchy and beautifully browned exterior while sealing in the juices of the chicken. How to Make Air Fryer Chicken Wings

Start with a 50/50 blend of flour and Argo® Corn Starch, then season it up! I like to use my own Homemade Season Salt, but you can add the seasonings individually, too. The Argo® Corn Starch​ helps to create the crispiest chicken with an airy texture.​

Then dip your naked wings into the breading mix. There’s no need for any wet pre-breading dip, as the moisture from the wings is enough to get the breading to stick, and as they cook in your air fryer, the fat from the skin helps to bring out that corn starch crisp just like traditional frying.

Follow the directions for YOUR AIR FRYER to prepare it for use.

For mine, I preheat it to 380F and give a rack a generous spray or brush with a healthy cooking oil. Then place your breaded raw chicken wings on it in a single layer.

The actual air frying is a two-part process that took me five dozen wings to perfect using two different air fryers over two days! And yet I still wanted to eat MORE WINGS!

The first step is air frying them at 380F for 25-30 minutes. This is what cooks the wings and gets the party started. 25 minutes for smaller wings and 30 minutes for larger wings. Roughly half way through, it’s best to flip your wings and give them a light spray of the cooking oil that you coated your rack with. This helps to get the breading fused to the skin and starts getting them crispy.

Then we’re going to increase the temp to 425F and get those wings CRISPY. My smaller air fryer only needed 5 minutes but my larger one needed closer to 12 minutes. So stay close by and check them frequently and feel free to flip them over as needed.

These Crispy Air Fryer Breaded Chicken Wings are so perfect. The breading stays completely attached to the chicken. It’s light enough to not overload you with a carb-coma and tastes deliciously fresh and hot but also provides leftovers straight out of the fridge!

You can use this same breading for chicken legs and chicken thighs, too! You’ll just want to increase your cooking time to accommodate larger, thicker pieces of chicken. I would suggest 45 minutes, then check a piece, looking for an internal temperature of 160F.

If you are gluten free, don’t worry! Argo® Corn Starch is naturally gluten free, but sub your favorite gluten-free flour blend for the regular flour. It will work great, too!

Instructions

  • Preheat air fryer to 380F and spray your rack (if necessary for your model)
  • Combine corn starch, flour and season salt in a large bowl.
  • Generously coat each chicken wing with breading. Arrange in a single layer on your Air Fryer rack.
  • Bake at 380 for 25-30 mintues or until chicken wings are cooked through and breading is starting to look yummy. Roughly 1/2 way through flip each wing over and lightly spray to moisten the breading.
  • Increase temperature to 425 and air fry another 5-10 minutes until wing are golden brown and cirspy. Enjoy!

Any breading that’s left over (there will be some) transfer to a baggie and keep it in the freezer to use later.
