What is a Reuben Sandwich?

Growing up, I hated sandwiches expect for a REUBEN sandwich.

A Reuben sandwich is an American sandwich made with grilled rye bread filled with corned beef, Swiss cheese, sauerkraut, and Russian dressing. It tastes so magical!!!

My mom would make them for an easy, late-night dinner on the nights my dad would work midnight shift. I’d stay up late and we’d have reuben sandwiches before he’d leave for work.  I was shocked that when Ray and I first started dating that he never had a reuben. It was love at first bite for him.

How to make a Reuben Sandwich Low Carb?

If you love a reuben sandwich as much as I do, but when you are eating a low carb or keto diet it means no bread and thus no reuben sandwiches. The easiest way to enjoy all the flavors of a reuben sandwich without the extra carbs is to ditch the bread and use pickles instead!

And enjoying pickles just got easier!!

How to make a Keto Reuben Sandwich with Pickles

To make my Easy Keto Reuben Pickle Bite, simply layer corned beef and Swiss cheese in-between 2 Mt Olive Munchies Kosher Dill Chips. Feel free to add in sauerkraut if you want, but I think the pickles are enough on their own.

Add a little Keto Russian or Thousand Island Dressing on each or serve it on the side as a dip.

Not only are they deliciously low carb, they are adorable too!!

Perfect for a quick and easy snack, but cute enough to serve at your next party.

Should you use Corned Beef or Pastrami on a Reuben?

A traditional reuben sandwich is made with corned beef. Pastrami is a very similar meat, only smoked. A “Rachel” sandwich is made with pastrami. However if you prefer pastrami instead of corned beef, go for it!

Ingredients

  • 1 pack Mt Olive Munchers Kosher Dill Chips
  • 8 ounces corned beef sliced thin
  • 4 ounces baby swiss cheese sliced thin

Keto Low-Carb Keto Dressing & Dip

  • 1/2 cup mayonnaise
  • 2 tablespoons Ketchup <<sugar free
  • 1/4 cup Mt Olive Munchies Bread & Butter Chips finely chopped

Instructions

  • Combine mayonnaise, ketchup and chopped bread and butter chips. Mix well. Chill before serving.
  • Prepare corned beef and swiss cheese by cutting them into 1 inch square slices.
  • Create a sandwich using the pickles as the bun, dressing, conred beef and swiss cheese.
  • Enjoy!
