Sautéed Kale with Bacon and White BeansI’d like to dedicate this recipe to my handsome husband, Ray. While he absolutely loves all sorts of naughty foods, he’s totally obsessed with all things kale and bacon… and looks for every opportunity to eat more beans!

I mean seriously, he puts kale in everything.

But he also put bacon in everything too… life is all about balance, right??

So when I’m looking for quick meals or side dishes for dinner, I always do my best as his wife to create delicious meals that I know he’ll love.

Like these Sautéed Kale with Bacon and White Beans… it was a no brainer that he’d love it.

And I was right!

Like many of the recipes that I share here, it’s almost a non-recipe. You don’t need to measure things and my Sautéed Kale with Bacon and White Beans adapts easily to more or less, based on what you have on hand.

Like all good meals, this one starts with bacon.

Sautéed Kale with Bacon and White Beans

Cook your bacon with some ghee or butter until crisp.

Remove the bacon from the fat and set aside for later..

Add garlic, sliced or chopped it doesn’t matter, but don’t be greedy there’s no such thing as too much garlic!

Then add the kale. It always looks like too much but after it cooks down you’ll worry it’s not enough, trust me.

After your kale is wilted, add your beans.

Just give everything a toss to heat the beans, if you stir’em too much your beans will break up. Add that delicious bacon back in and enjoy!

If you, like my hubby Ray, wants a little more juice (aka almost soup) add a little chicken bone broth or water. I catch him adding water to all sorts of dishes to make it “juicier.’ Oy Vey!

Sautéed Kale with Bacon and White Beans

Servings: 2 servings

Ingredients

  • 1 tablespoon Ghee
  • 1/4 pound bacon, chopped
  • 4 cloves Garlic
  • 2 bunches fresh kale cleaned, chopped
  • 1 can organic cannellini beans

Instructions

  • Saute bacon in ghee until crispy. Drain bacon and set aside, keeping the fat in the pan.
  • Add garlic, sauce until soft. Add kale, wilt.
  • Stir in drained beans and reserved bacon. Heat through. Don't over stir.
