I get so excited for the first of the year, I love the idea of a fresh start and setting intentions for the year ahead. I especially LOVE buckling down for a New Year’s kick start, which for us this year (2018) includes having a low-carb diet and lots of intermittent fasting. The biggest mistake people make is getting hung up on the things they leave behind when they embark on a new year’s resolution, when they should be focusing on all the awesomeness they get to enjoy, like my Low-Carb Spinach and Feta Quesadilla!

Let me be honest with you (because you know I always am, it’s like totally my ‘thing’). I’ve been enjoying Spinach and Feta Quesadillas for YEARS. Like before I got married, that kind of long time. (We’re celebrating our 15th wedding anniversary next month, yikes!) I can’t take credit for this ‘recipe’ since I first had a “Popeye Quesadilla” when I was a teenager at an Arts Festival back in the 90’s.
While I’ve never been a vegetarian per se, I’ve always LOVED vegetables and from a young age, took great pride in my love of all things veggie. I distinctly remember feeling super cool when I ordered the vegetarian option…
It was the 90’s, I was like 16 or 17 and already a foodie.
I refuse to apologize.
Anyways. As much as I’ve enjoyed Spinach and Feta Quesadillas over the years, I’ve had to avoid them because the tortillas were too high in carbs (true story) and even when I tried to use other types of tortillas, it just wasn’t the same.
I never in a million years would have thought that I would enjoy this deliciousness and it be low-carb, too!!

And they are so easy to make! Just smear a tortilla with pesto (store bought is ok!), top with sautéed spinach and mushrooms, layer on the cheeses, then sandwich it all with another tortilla on top!
Just give your quesadilla a little crisp in your favorite cast iron skillet with some butter – you know, grilled cheese style; melting the butter first, bathing the quesadilla in the lovely fats until lightly brown, then flip.
All this low-carb deliciousness is making me hungry for another Low-Carb Spinach and Feta Quesadilla… you too??
The spinach and mushroom sauté is smothered in melted cheese, with the deliciousness of pesto bringing it all together inside 2 crispy LOW-CARB tortillas.
I know your mouth is watering because mine is too…
Serve up my Low-Carb Spinach and Feta Quesadilla with your favorite pizza or spaghetti sauce, then do your best to just eat one quesadilla.
I fail at that part, every time.
But at just 6 net carbs per tortilla, who cares!??!?!?! Right?

For the Sautéed Spinach and Mushrooms:
For the Quesadillas:
- Organic Grass-Fed Butter or Ghee
- Mission® Carb Balance Tortillas
- pesto sauce
- crumbled feta cheese
- Grated Mozzarella Cheese
- Pizza Sauce optional
- For the Sautéed Spinach and Mushrooms: In a skillet over medium heat, melt butter. Add garlic and mushrooms, season with sea salt and squeeze in the juice of 1 lemon wedge (this prevents mushrooms from turning black). Saute 3-5 minutes or until mushrooms are cooked through. Then add spinach and mix. Cook just until spinach is wilted, remove from heat.
- Assemble your quesadilla by spreading pesto on one side of a tortilla, then top with sautéed spinach/mushrooms and cheese. Place another tortilla on top to make a quesadilla.
- Fry your quesadilla in butter for 1-2 minutes per side over medium heat, or until lightly brown and cheese is melted.
- Transfer to a plate and cut into pieces, serve with pizza sauce, if desired.
