Smoked BBQ Pork Nachos

Smoked BBQ Pork NachosThis summer I’m excited to be hanging out at the Morgantown Farmer’s Market once a month on behalf of our friends Working H Meats and Market – sharing creative ways to enjoy their delicious and high-quality meats!

Working H Meats & Market

Today I’m featuring their Smoked Shredded Pork! They pre-smoke and shred their pork, then pack it in 1 pound frozen packs so that it’s just season, heat & eat, smoky pork deliciousness!

What a great idea, right??

Smoked BBQ Pork Nachos

The smoky pork, paired with melted cheddar cheese, crispy corn tortilla chips, drizzled with my Last Minute BBQ Sauce and garnished with fresh green onions make for the prefect appetizer, snack or even a light meal!

Simply place 1 pound (or more) of Smoked Pork (thawed or frozen) in your crockpot/slow cooker and season liberally – I recommend using my Homemade Seasoned Salt.  Cook on low all day or high for 4+ hours, so that the fat can render and the shredded pork becomes even more tender. You can also heat it up on the stove or in the oven, but trust me nothing beats slow and low!

Top corn tortilla chips with shredded pork and cheddar cheese, bake just to melt the cheese, if desired…

Then top with a drizzle of my Homemade BBQ Sauce and lots of fresh sliced green onions (Ramps, aka wild leeks, work great too!).

These are addictively delicious! You can also serve them in taco shells or in lettuce wraps in place of the chips.

P.S. Just one last thing before we get to the recipe, PLEASE do yourself a favor and make my Homemade BBQ Sauce, don’t skimp and buy bottled. I promise it will be your new favorite BBQ – it’s not only delicious it’s also super easy to make, no chopping or fussy anything –  just measure, mix and simmer.

Ingredients

For the Smoked Shredded Pork

For the Nachos

Instructions

  • In your crock pot, combine smoked pork and seasoned salt. Can be cooked from thawed or frozen. Since the pork is pre-smoked it only needs to be heated to 160 for safety, but I prefer to let it cook all day on low 8+ hours or high 4+ hours.
  • Preheat oven to 350 degrees.
  • Arrange chips on a baking sheet, top with shredded pork and cheese. Bake until the cheese is melted, roughly 3-5 minutes.
  • Remove from oven, transfer chips to serving plate. Drizzle with BBQ Sauce and sliced green onions. Enjoy immediately.

Notes

For each 1 pound of smoked pork, I used 1 tablespoon of my homemade seasoned salt. If you are using any other seasoning, please season to taste.
