We LOVE mushrooms, not only do they taste super yummy – they are also really, really good for you!!!
This is a side dish we have often, but especially in the summer when we have fresh green beans in the garden 🙂
You can use fresh, frozen or even canned green beans and you can use any type of mushroom you have available, even reconstituted dried mushrooms will work very well. Our favorites are shiitakes, chanterelles, morels, and regular white button mushrooms.
In a large skillet, saute your mushrooms in butter. Season with sea salt to taste.. set aside.
Steam your fresh green beans to desired doneness (we like our very crispy, barely cooked)…. Toss your cooked green beans in with your sauteed mushrooms – season with sea salt & pepper to taste – ENJOY!
