It feels really strange to be talking so much (recently) about low-carb… I feel like it’s a complete blast from the past, I started eating low carb back in 1999 when I was a senior in college and while I’ve never eaten a “high carb” diet, it’s only been recently that I’ve become more dedicated to eating low carb again.
When I talk about eating low carb, I’m not talking about high protein diets. I don’t feel that eating copious amounts of protein is healthy, I do however feel that low carb, HIGH FAT is extremely beneficial for most people (with moderate protein intake). And of course, we’re not talking about processed high fat foods like margarine, canola/soy/corn oil or trans fats – I’m only advocating real-food fats from traditional sources (like pasture raised animals, wild caught seafood, olives, avocados, coconuts, etc)
Getting back to my cooking-roots (after all when when I was first becoming creative in the kitchen it was with low-carb recipes) is a lot of easy fun for me.
