Perfect Roast Chicken with Vegetable Gravy & LeCreuset Giveaway

Ingredients

Instructions

  • Preheat oven to 350
  • Place Cauliflower in the bottom of your dutch oven and place chicken on top
  • Surround chicken with remaining vegetables
  • Season Chicken/Veggies liberally with sea salt & pepper
  • Cover with lid and bake 2-3 hours at 350, or until your chicken is cooked through and falling apart.
  • Remove chicken from dutch oven, transfer to a plate and set aside
  • Place cooked vegetables and drippings in your blender, puree until smooth. Add water as needed to make the perfect gravy for your family. Season with additional salt and pepper to taste.
  • Return chicken to the dutch oven and boil to brown/crisp the skin
  • Serve Roasted Chicken with Vegetable Gravy

  7. I’ve seen these dutch ovens and wished I could get one one day, maybe this will be the day! And I LOVE your chicken and vegetable gravy idea! I usually cook my chicken in the crock pot with the vegetables you mentioned (except for the cauliflower, which I will now add too). I never thought of pureeing the veggies to make a gravy! Ingenious!
    In case I don’t win, can I make this in a regular ceramic coated dutch oven? (I don’t think it can go in the oven, and definitely not in the broiler…)

  11. Looks yummy. Can’t wait to try this, especially for the lack of spatter in the oven. When I roast a chicken now, I do it in an open cast-iron skillet and it makes grease spatter all over inside the oven. Sure makes for a great chicken though.

  17. If I would win this Le Creuset Dutch Oven, I would definitely make roast chicken and would also use it for other things, like my husband’s favorite–Braised Elk Roast with Vegetables.

    1. Elk is my FAVORITE wild game! I made amazing elk ravioli (in my gluten eating days) and I’m hoping to get some elk this winter (we don’t hunt it here so we need to be gifted it from someone who goes out west hunting) to make some grain free this year!
