Recently, I was asked what my favorite Rhubarb recipe. It was a great reminder that I haven’t shared it with all of you yet!! Last year I made up my first batch of Rhubarb Cordial.. and just recently found it in the back of our garage fridge (yes I frequently age things, especially cordials and such in our spare fridge and forget about them!)
With my first sip from the jar, I was in head over heels in love!! So, in love that I immediately got more rhubarb cordial brewing!
It’s so easy to make, but sounds fancy and labor intensive, huh??
Here’s how you make my Rhubarb Cordial:
- 2 Pounds Rhubarb, cleaned and cut into 1″ pieces
- 1c Organic Sugar
- 1liter Organic Vodka (I prefer Rain Organic Vodka)
In a quart canning/mason jar layer rhubarb and sugar, top with vodka to fill the jar. Cover with a tight fitting lid and let sit for 1 month, shaking every few days (to help the sugar break down). After 1 month, strain out the rhubarb and transfer your cordial to a clean jar or bottle(s). It’s ready to enjoy now, but aging it in the fridge helps the flavors develop.. ours has been aging for about a year total and the flavor is amazing!!
The batch I’m making now, I’ll use for holiday gifts!
